For our first culinary Cultural Exchange Series, we're handing over the kitchen and conversation to Petty Elliott.

The Manado-born chef and author of The Indonesian Table and The Indonesian Vegetarian Table (Phaidon) has spent her career showing the world how diverse and plant-rich Indonesian cooking really is. Over four days at the Desa, she'll cook and teach her way through it with us.

The residency centres on Indonesia's culinary biodiversity: the spices, herbs, and ingredients that connect an entire archipelago. There are two dinners: one that complements the Purnama full-moon meditation at Tanaman, and a long-table gathering of Eastern Indonesian dishes at Kaum. Then, a live Desa Dialogue at Dome invites Petty to unpack her culinary journey. Come hungry for nostalgic regional Indonesian food and the decades of knowledge behind it.
