Analogue is the latest creative venture by the team behind Singapore’s Native Bar. Led by Vijay Mudaliar, Analogue has been crowned as one of Asia’s 50 Best Bars. They are committed to rethinking the current food system through a sustainable 360-immersion, from design to plant-based cuisine, and a focus on non-alcoholic drinks.
Dylan Choong is inspired by analogous ingredients that hint at what the future of farming and diets could be, providing a quirky experience of a future-forward night out. Think carob in place of chocolate, tonka bean instead of vanilla, and chicory instead of coffee, and drinks that they imagine NASA pilots would bring to space.
Analogue’s team will be staying at the Desa this February, continuing the collaboration with Chef Dominique Hammond and Bina Nuraga after their pop in Singapore on February 14th. This time, they’ll be exploring Indonesian spirits and ingredients– from root to flower.
