On 1 December, we welcome British bartender Matt Whiley to Tanaman with his Never Wasted masterclass.

Matt has garnered a reputation as one of the bar industry’s boldest protagonists. Having taken the UK drinks scene by storm with his London-based venues Peg + Patriot and Scout, he’s now based in Sydney, Australia where he runs Re — a relaxed, non-preachy bar where menus are printed in recycled coffee cups, benches are covered in pineapple leaf fibre and lights sprout from mycelium.

Previously named one of The World’s 50 Best Bars, Re aims to create a template for the future — leading the Never Wasted movement, alongside renowned bars like Maybe Sammy, to reduce production waste by using byproducts in the most creative ways imaginable. At Re, guests can expect to be served a Dirty Old Fashioned, cocktails crafted with leftover cheese whey, or syrups made with banana skins and surplus fruit.

In a collaborative effort, Matt will be hosting Re-Wined — a bar guest shift at Mosto Bali on 30 November focused on grape produce — before diving into a deeper conversation with us at Tanaman on 1 December.
