Some of the most flavourful parts of an ingredient are also the most overlooked.
For one evening at Dome, Akbar Yusuf, Assistant Manager Beverage R&D at Desa Potato Head Bali, and Ajung, founder of ACS, will create a special menu of gin and tonic cocktails using Three Peaks gin.
Each drink begins with an ingredient that might usually be left behind: an aromatic peel, a fragrant herb stem, a fruit offcut or another flavour-rich by-product of the kitchen and bar. Through careful preparation, these ingredients will be transformed into layered infusions, vibrant syrups and distinctive garnishes.
Akbar will explore their creative potential through flavour, finding new depth and character in familiar ingredients. Ajung will bring a circular approach informed by his work in Bali, showing how thoughtful separation and reuse can keep valuable ingredients and materials in circulation for longer.
The experience continues beyond the cocktails. Wasted by Potato Head will provide glassware and coasters made from recycled and repurposed materials, giving each drink a setting that carries the same spirit of transformation.
The evening takes its name from Palemahan, part of the Balinese philosophy of Tri Hita Karana. It speaks to the importance of harmony between people and the natural environment.
Bringing together Bali-made gin, local talent and resourceful design, Palemahan is a celebration of transformation—revealing new flavours, textures and possibilities in ingredients and materials that deserve a closer look.
