Recipe: Our Bom Bom Mary

Our version of a Bloody Mary is so fresh and veggie-packed it could almost pass as a health drink (almost).

This is Potato Head’s own tricked-up Bloody Mary. “We take the opportunity to use a lot of ingredients from our farm in this drink,” says head mixologist Hary Wahyudi. It’s named after the man who grows our produce, Mr Bom Bom, in the farm in the hills of Bedugul.

Start the process a day ahead if you’re going to experiment with citrus husk vodka. If not, the straight stuff tastes great, too.

Here’s the recipe:

Ingredients 120 ml fresh tomato juice 30 ml fresh celery juice 30 ml fresh cucumber juice 30 ml red pepper juice 15 ml lemon juice 4 kemangi basil leaves 3 dill sprigs

1 thyme stem Pinch of salt Pinch of pepper 30 ml Tabasco or Sambal ABC 45 ml regular vodka or citrus husk vodka (recipe below) 30 ml tamarind cordial (recipe below)

To make tamarind cordial

Ingredients 2-3 tbsp tamarind paste (50 g) 500ml filtered water 1 ½ cups cane sugar 1 tsp citric acid

Method Boil tamarind paste for 15 minutes on a low heat. Once the paste has dissolved, strain and combine with cane sugar and citric acid. Stir until fully dissolved. Cool and bottle.

To make citrus husk vodka

Ingredients 1 bottle of regular vodka 5 pcs squeezed lemon wedges (save your kitchen leftovers to make it zero-waste)

Method Combine vodka and lemon wedges in a jar. Allow to infuse for 24 hours at room temperature. Strain, bottle, keep in the fridge.

Chilli salt (This is used on the rim of the glass for extra punch and flavour). Blend or crush 1 tsp of salt, ½ tsp of chilli flakes and ½ tsp black peppercorns until even and well combined. Keep dry.

To make our Bom Bom Mary Dip the rim of a highball glass in the chilli salt mix and set aside. Next, blend all ingredients together and strain into the glass. Serve with ice and garnish with cherry tomatoes on a skewer or just on the rim of the glass. We like to finish with a sprig of fennel flower on top for fragrance, or if you like use a fresh celery stalk instead. Enjoy.
